Cut two large pieces of aluminum foil, each about 12 inches long.
In a small bowl, whisk together the olive oil, minced garlic, lemon juice, dried oregano, dried thyme, salt, and pepper.
Place one salmon fillet in the center of each piece of foil.
Surround the salmon with sliced zucchini, bell pepper, and red onion, dividing them evenly between the two packs.
Drizzle the olive oil mixture generously over the salmon and vegetables.
Fold the sides of the foil over the salmon and vegetables, creating a sealed packet. Make sure there are no openings for steam to escape.
Place the foil packs on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
Remove from the oven, open the packs carefully to avoid steam, and garnish with fresh parsley before serving.
