2 medium apples (Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

1/2 cup sugar

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/2 teaspoon salt

1/2 cup milk

1 large egg

2 tablespoons vegetable oil

1 teaspoon vanilla extract

1/2 cup powdered sugar (for glaze)

1-2 tablespoons milk (to thin glaze)

Instructions
 

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    In a large bowl, combine diced apples with 1 tablespoon of sugar and 1 teaspoon of cinnamon. Toss them well and set aside to marinate while you prepare the batter.

      In another bowl, whisk together the flour, remaining sugar, baking powder, ground cinnamon, nutmeg, and salt.

        In a separate bowl, mix the milk, egg, vegetable oil, and vanilla extract until well combined.

          Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

            Fold in the marinated apples until evenly distributed throughout the batter.

              Using a spoon or an ice cream scoop, drop large spoonfuls of the batter onto the prepared baking sheet, leaving enough space between each fritter for spreading.

                Bake in the preheated oven for 15-20 minutes, or until the fritters are golden brown and a toothpick inserted comes out clean.

                  While the fritters are baking, prepare the glaze by mixing powdered sugar with just enough milk until you achieve a thick, but pourable consistency.

                    Once the fritters are baked, remove them from the oven and let them cool for about 5 minutes before drizzling the glaze over the top.
