1cupcooked and seasoned ground beef or black beans
1cupsour cream
1cupshredded lettuce
1mediumtomato, diced
0.5cupsalsa
4largeflour tortillas
1teaspoontaco seasoning
to tastesalt and pepper
as neededcooking oil for frying
Instructions
Preheat the oven according to the package instructions for the tater tots. Bake them until golden and crispy, usually around 25-30 minutes.
While the tater tots are baking, cook the ground beef (or heat the black beans) in a skillet over medium heat. Add the taco seasoning, salt, and pepper, and mix until well combined. Cook until heated through.
Lay out a large flour tortilla on a clean surface. In the center, layer 4-5 tater tots, followed by a scoop of the seasoned meat or beans, a sprinkle of shredded cheese, a dollop of sour cream, and a scoop of salsa.
Add some shredded lettuce and diced tomato on top of the filling.
Fold in the sides of the tortilla and then roll it tightly from the bottom to the top to form a burrito.
Repeat this process for the remaining tortillas and fillings.
In a skillet, heat a small amount of cooking oil over medium heat. Place the burritos seam-side down and cook for 2-3 minutes until they are golden brown and crispy, then flip and repeat on the other side.
Once all burritos are golden and crispy, remove them from the skillet and let them cool slightly before slicing in half to serve.
Notes
Arrange the burritos on a platter with extra salsa and sour cream on the side for dipping. Garnish with fresh cilantro or green onions for a pop of color.
