Instructions
In a bowl, combine sliced chicken, 1 tablespoon of soy sauce, and a pinch of salt and pepper. Let it marinate for at least 15 minutes.
In a small bowl, whisk together the remaining soy sauce, sesame oil, honey, cornstarch, and water. Set aside.
Heat a large non-stick skillet or wok over medium-high heat. Once hot, add the marinated chicken and stir-fry for about 5-7 minutes or until fully cooked and golden brown. Remove the chicken and set aside.
In the same skillet, add a bit more sesame oil if needed. Add minced garlic and grated ginger, sauté for 30 seconds until fragrant. Then add the broccoli, red bell pepper, and snap peas. Stir-fry for another 4-5 minutes until the veggies are tender-crisp.
Return the cooked chicken to the skillet with vegetables. Pour the prepared sauce over the mixture and toss everything together for an additional 2-3 minutes until the sauce thickens and everything is coated well.
Remove from heat. Garnish with sesame seeds and chopped green onions before serving.
Notes
Serve in a large bowl or divide among plates for a colorful presentation.
