Ingredients

1 pound cooked chicken breast, shredded

1 can (15 oz) white beans, drained and rinsed

1 can (4 oz) diced green chilies

1 medium onion, diced

2 cloves garlic, minced

4 cups chicken broth

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon oregano

1 cup heavy cream (or coconut milk for a lighter version)

1 cup corn (fresh or frozen)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

In a large pot, heat a splash of olive oil over medium heat. Add the diced onions and sauté until translucent, about 5 minutes.

Stir in the minced garlic and cook for an additional minute until fragrant.

Add the shredded chicken, white beans, green chilies, corn, chicken broth, cumin, chili powder, and oregano to the pot. Stir to combine.

Bring the mixture to a simmer and let cook for about 20 minutes, allowing the flavors to meld.

Reduce the heat to low, and stir in the heavy cream. Let it heat through for about 5 minutes, making sure not to boil.

Season with salt and pepper to taste. Adjust seasoning if needed.

Serve hot, garnished with chopped cilantro and lime wedges on the side for an added burst of freshness.
