In a large mixing bowl, combine the ground beef, diced pineapple, chopped red onion, soy sauce, salt, and pepper. Mix well until all ingredients are evenly incorporated.
Form the beef mixture into 12 small patties, ensuring they are slightly smaller than the rolls since they will shrink while cooking.
Heat the sesame oil in a large skillet over medium-high heat. Once hot, add the patties. Cook for 3-4 minutes on each side until they are browned and cooked medium (internal temperature of 160°F / 71°C).
During the last minute of cooking, place a tablespoon of shredded cheddar cheese on each patty and cover with a lid to melt the cheese.
While the patties are cooking, prepare the spicy mayo by mixing together the mayonnaise and sriracha in a small bowl. Adjust the amount of sriracha to taste.
Slice the Hawaiian rolls in half, keeping them attached in a single slab. Place the bottom half in a baking dish.
Spread a generous layer of the spicy mayo on the bottom half of the rolls.
Once the cheese is melted, place each patty on the mayo-covered bottom half of the rolls.
Add the top half of the Hawaiian rolls over the patties, pressing them down gently.
Cover the baking dish with aluminum foil and bake in the preheated oven for 10-12 minutes until everything is warmed through.
Remove from oven, slice the sliders, and garnish with fresh cilantro leaves before serving.
Notes
Serve in the baking dish with a small bowl of additional spicy mayo on the side for dipping. Garnish with extra pineapple chunks or cilantro for an added tropical touch!
