In a large mixing bowl, combine the ground beef, garlic powder, onion powder, smoked paprika, Worcestershire sauce, salt, and pepper. Mix gently until fully incorporated.
Divide the beef mixture into 8 equal portions and shape them into mini patties, slightly larger than the slider buns as they will shrink while cooking.
Heat olive oil in a large skillet over medium-high heat. Once hot, add the patties and cook for approximately 3-4 minutes on each side, or until they reach your desired doneness.
During the last minute of cooking, place a slice of cheddar cheese on each patty. Cover the skillet with a lid to melt the cheese completely.
While the patties are cooking, prepare the slider buns. Lightly toast them in a separate pan or under a broiler until golden brown.
To assemble the sliders, spread a thin layer of mayonnaise on the bottom half of each bun. Place a cheesy beef patty on top, followed by a few slices of red onion and a handful of arugula or spinach. Add pickles or jalapeños if desired, then cover with the top bun.
