Instructions
Preheat your oven to 375°F (190°C).
Cook the penne pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the shrimp to the skillet and cook for 3-4 minutes, or until they turn pink and opaque.
Stir in the cherry tomatoes, chicken broth, lemon juice, and red pepper flakes. Cook for an additional 2 minutes to allow the flavors to meld.
In a large bowl, combine the cooked pasta with the shrimp mixture. Add salt and pepper to taste and mix well.
Transfer the pasta and shrimp mixture into a greased 9x13 inch baking dish.
Sprinkle the mozzarella and Parmesan cheese evenly over the top.
Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
Remove from the oven and let cool for a few minutes. Garnish with freshly chopped parsley before serving.
