Taco Ranch Bites

Ingredients
  

1 lb ground beef or turkey

1 packet taco seasoning

1 cup ranch dressing

1 cup shredded cheddar cheese

1 cup diced tomatoes

½ cup chopped green onions

1 cup corn tortillas, cut into triangles

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, heat olive oil over medium heat. Add the ground beef or turkey, and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

      Drain any excess fat, then add the taco seasoning along with a splash of water according to the package instructions. Stir to combine and let simmer for about 5 minutes, stirring occasionally. Season with salt and pepper to taste.

        Meanwhile, prepare a baking sheet lined with parchment paper. Spread the tortilla triangles evenly on the sheet and bake them in the preheated oven for about 8-10 minutes, or until crispy and slightly golden.

          Once the meat mixture is ready, take it off the heat. Add in the ranch dressing, shredded cheese, diced tomatoes, and chopped green onions. Stir until well combined.

            Remove the crispy tortilla triangles from the oven and top each triangle with a spoonful of the taco ranch mixture.

              Return the topped tortilla bites to the oven for an additional 5 minutes, just to melt the cheese slightly.

                Remove from the oven and let cool for a minute. Garnish with fresh cilantro if desired before serving.
